Eggnog Crepes With Cranberry Grand Marnier Compote
The flavor of the eggnog in the crepe batter is so delicious and unexpected. The cranberry Grand Marnier compote will fill your home with the most wonderful scent.
When Mr. Frugalista walked in the door the day I made these the first thing he said was, "it smells just like Christmas in here."
How Can I Serve The Cranberry Compote?
You can serve the compote warm or cold, either way, it is delicious. It has a very robust flavor that can compete with the eggnog crepes, so less is more!
For the sake of a pop of color for the photos, I drizzled way more than necessary over the crepes. My suggestion would be to serve it with just a teaspoon or have it on the side.
How Can I Serve The Eggnog Crepes?
The crepes are very tasty on their own so you could eliminate the compote and garnish with just a light dusting of icing sugar with fruit. Maraschino cherries, mandarin orange slices, thin apple slices, or strawberries would pair well with these.
You can serve the crepes rolled like I did, folded in quarters or halves, or stacked.
How Long Can They Be Stored?
Store the crepes in layers between sheets of parchment paper in a large freezer bag. The compote can be stored in an air-tight plastic container. Both can be stored in the refrigerator for up to five days and in the freezer for up to two months.
How Do I Reheat Frozen Crepes?
Thaw the frozen bag of stacked crepes in the refrigerator. Remove the stack from the bag and reheat on high in the microwave for approximately 15 seconds. May also reheat in a covered pan in a warming drawer.
The sauce can be reheated in a covered dish in the microwave for approximately 30 seconds or in the oven at 350℉ for 15-20 minutes.
What Ingredients Will I Need For The Crepes?
Pictured below are the ingredients you'll need to make these yummy eggnog crepes. Make the frothy batter the night before and store it in the refrigerator. I use regular eggnog rather than light in this recipe.
Eggnog Crepe Ingredients
4 Eggs
1 cup eggnog
1 cup water
2 cups all-purpose flour
4 tbsp cooking oil
1/4 tsp salt
What Ingredients Will I Need For The Cranberry Grand Marnier Compote
You are going to love the holiday scents that will fill your home when making this mouth-watering compote. Pictured below are the ingredients you'll need to make it, including Grand Marnier.
4 cups fresh or frozen cranberries
1 cup granulated sugar
1/2 cup water
1 1/2 tbsp orange zest
1/4 cup fresh-squeezed orange juice
3 tbsp Grand Marnier
1/8 tsp ground cloves
1/2 tsp cinnamon
How Many Crepes Will This Recipe Make?
This recipe will make approximately 18 small six-inch crepes using an eight-inch non-stick skillet. A small ladle measures just the right amount of batter.
Tips For Making Crepes
- You want to beat the eggs first until they get frothy. A hand blender works perfectly for this and I must apologize for the state of mine (stained from homemade soups) but it is still going strong.
- Once the ingredients are beaten together and frothy, cover the batter in plastic wrap and store it in the refrigerator overnight.
- It's always a good idea to spray the pan first with cooking oil to ensure the first crepe doesn't stick.
- Pour one small ladle of batter into the preheated skillet and swirl the batter evenly over the bottom of the skillet.
- Cook at medium heat and remove when the underside of the crepe is lightly brown.
Tips For Making Cranberry Compote
- I used frozen cranberries but you could use fresh cranberries.
- Set aside 3/4 cup of cranberries for the final simmer so your sauce has some whole berries that haven't burst.
- The sauce will thicken as it reduces. If it needs to be thickened more during the last five minutes, add cornstarch thinned with water 1/4 teaspoon at a time until the desired thickness is achieved.
As promised I've included a printable recipe card for both recipes below. Enjoy!
Eggnog Crepes With Cranberry Grand Marnier Compote
Ingredients
- 4 Eggs
- 1 cup eggnog
- 1 cup water
- 2 cups all-purpose flour
- 4 tbsp cooking oil
- 1/4 tsp salt
- 4 cups fresh or frozen cranberries
- 1 cup granulated sugar
- 1/2 cup water
- 1 1/2 tbsp. orange zest
- 1/4 cup fresh-squeezed orange juice
- 3 tbsp. Grand Marnier
- 1/8 tsp ground cloves
- 1/2 tsp. cinnamon
Instructions
- Beat eggs in a large bowl with a hand blender until frothy.
- Add remaining ingredients and beat until smooth and frothy.
- Cover with plastic wrap and store in the refrigerator overnight.
- Add more eggnog if the batter is too thick.
- Grease 8-inch non-stick skillet with cooking spray and preheat on medium heat.
- Pour a small ladle of crepe batter into the hot skillet and swirl the batter evenly over the bottom of the pan.
- Remove when the underside is lightly browned.
- Stack with parchment paper between each crepe and store in a large plastic freezer bag.
- Reserve 3/4 cup of cranberries.
- In a small saucepan, simmer remaining cranberries, sugar, cinnamon, ground cloves, water, and orange juice uncovered on medium heat for 20 minutes and starts to bubble.
- Add reserved cranberries and Grand Marnier and simmer uncovered for 10 -15 minutes to let the compote reduce and thicken.
- If the compote needs to be thickened add cornstarch thinned with water in 1/4 tsp intervals until reached the desired thickness.
- Garnish with orange zest.
Notes:
Some of the alcohol in the compote will burn off during simmering, however, up to 40% may be retained in the sauce. Can serve the eggnog crepes with a dusting of icing sugar and fresh fruit instead.
The cranberry compote is bursting with flavor and can compete with the eggnog flavor of the crepes. Top with just 1 teaspoon of cranberry compote or serve it on the side.

ReplyDeleteOh Bev, they really are decadent. I have them stored in the freezer right now to enjoy with hubby this weekend before we decorate the house.
DeleteOh my gosh, Marie. These are making my mouth water. I have been resisting the egg nog at the grocery store since before Halloween (which is when I first saw it around here), because I have no willpower against it. :D I'm pretty sure I will not be holding out until Christmas to make these! I am putting ingredients on my list right. now. Thanks for sharing!
ReplyDeleteYou will love them, Amy! My suggestion is that if you make the compote, have it on the side or just enjoy the eggnog crepes on their own with a dusting of icing sugar. I put these in the freezer to enjoy this weekend before we decorate the house. They've been calling my name from the freezer ever since. LOL
DeleteThese are so tempting, Marie! I am definitely going to make some of these crepes! Freezing them for Christmas morning is a great idea, too. The family will love these! Pinned!
